In a way, innkeepers are more mysterious than chefs. They create spectacular, delicious meals... but in many cases they do it in what you know must be a kitchen that's not all that different from your own! So what's the secret? Former innkeeper and now consultant. One great tip that was passed on to me was to freeze fully cooked muffins
(this is great for when you are away and your assistant or innsitter is doing breakfast) All you have to do is put the muffins back in the tin still frozen and bake at the same time and temp. to originally baked them at. they come out great. I found that using the microwave to defrost baked boods is not good. The texture is not the same and it has that microwaved look and taste (if there is such a thing!)
