Pineapple Sour Cream Coffee Cake Recipe

INGREDIENTS:

  • 1 1/2 cups sugar
  • 3/4 cup butter or margarine
  • 16 ounces sour cream
  • 3 eggs
  • 1 1/2 teaspoons of vanilla
  • 3 cups flour
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 (20-ounce) can of crushed or chunk pineapple (fresh pineapple when in season)
  • brown sugar to taste
  • about 1 cup of crushed baking walnuts

PREPARATION:

Preheat oven to 350 degrees.

Mix together sugar, butter, sour cream, eggs, and vanilla. Then mix in flour, baking soda, baking powder, and pineapple.

Grease a 9 x 13 glass baking dish. Spread mixture in dish and sprinkle brown sugar and baking walnuts over mixture.

Bake at 350 degrees for approximately 45 minutes.
