Innkeeper Comments:
We keep a local New England flavor to our breakfast offerings, with such ingredients as
rhubarb, blueberries, cranberries, apples, pumpkin, maple, etc. This is one of our
guests' favorites.
Ingredients:
Cream sugar and butter. Add eggs and rhubarb. Sift and mix all dry ingredients. Add all
together. Bake at 350 for 45-50 minutes.
Batter should be stiff/somewhat dry; if not, add some flour. A "liquidy" batter will
result in a heavy/flat cake.
When done, rub some butter over top for a glaze. Serve plain or with strawberry jam.
