Innkeeper Comments:

As a young child, Bruce spent many weekends with his paternal Grandma Edith and Grandpa Floyd. Edith was a wonderful baker; Bruce learned a lot of basics and a love of cooking and baking from her. These traditional Swedish cookies are Edith's original recipe -- she baked these wonderfully light and addictive cookies every Christmas. When she was too old to bake, Bruce took over the tradition and makes dozens and dozens of Peppar Kakar during the holiday season. Enjoy this little bit of nostalgia!

Ingredients:

  • 1 cup sugar
  • 1/2 cup molasses
  • 1/2 cup light Karo syrup
  • 1 cup butter
  • 3 tablespoons sweet cream
  • 1 teaspoon baking soda mixed in a little hot water
  • 1/2 teaspoon crushed Cardamom seeds
  • 1 egg
  • 5 1/2 to 6 cups flour (or enough to roll)
Instructions:

Boil the sugar, molasses and Karo syrup. Pour over butter, stir until cool. Add sweet cream, baking soda, Cardamom seeds, egg and flour. Refrigerate overnight.

The key to success is to roll the dough very thin. Bake 350 degrees for about 9 minutes. Keep a watch as they cook quickly!
