This is one of our favorite tea-time treats here at The Gables Inn. I hope you will enjoy it as much as our guests do!

Ingredients:

Base

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 1 10-ounce jar strawberry jam (raspberry or apricot is also good)
Streusel Mixture
  • 1 cup flour
  • 1/4 cup cold butter
  • 1/4 cup sugar
Icing
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla
Instructions:

In medium mixing bowl, beat butter and granulated sugar with an electric mixer or by hand until fluffy. Beat in egg. Add flour gradually until fully incorporated. Press this mixture into the bottom of a greased 9 x 13 or 10 x 10 baking pan. Spread jam to within 1/2 inch of the edges.

Make streusel mixture by combining butter, flour and sugar with a pastry blender or 2 forks until crumbly. Sprinkle evenly over preserves and bake in preheated 350 degree (F) oven for about 40 to 45 minutes until top is lightly golden brown. Cool on a wire rack. When cool, combine icing ingredients until very smooth and drizzle over bars. Let set 1 to 2 hours before cutting into bars. Makes 24 bars.
