Wedgwood Chocolate Banana Loaf

Prep Time: 20 minutes

Cook Time: 60 minutes

Ingredients:

  • 3 1/2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 1/4 teaspoon cinnamon
  • 1 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 cups ripe bananas, mashed
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/2 cup melted butter
  • 1/2 cup evaporated milk
  • One 12-ounce package white chocolate chips

Preparation:

Preheat oven to 350 degrees F. Grease and flour 2 loaf pans.

Stir together the flour, baking powder and soda, cinnamon, nutmeg and salt in a large bowl. In another bowl, beat the mashed bananas, sugar, eggs and butter until creamy.

Add the milk and the dry ingredients to the banana mixture, mixing until well blended. Stir in the chocolate chips.

Pour batter into pans. Bake for 60 minutes.

For variation, substitute 4 cups of chopped nuts for the chocolate chips. Better yet, simply stir in 2 cups of chopped nuts in addition to the chips!
