Ingredients:

  • 2 cups flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • Dash of salt
  • 1 large egg, beaten
  • 3 tablespoons melted butter
  • 3/4 cup milk
  • 1 cup fresh or frozen raspberries

Preparation:

Preheat oven to 375 degrees F.

Mix the dry ingredients together. Mix the egg, butter and milk together and fold into the dry ingredients. Gently fold the raspberries into the other ingredients.

Grease the muffin tins and fill three-quarters full with the batter. Bake for 30 minutes or until done.

I took the suggestion of adding more milk to the batter and they turned out great. The batter itself had a weird consistency. Very thick and sticky. I like them because they aren't overly sweet and by my calculations only about 50 calories for a mini muffin! I topped each muffin with a sprinkling of granulated sugar before baking. I wonder if adding some lemon zest to the batter would add a nice touch?
