- 2 egg whites
- 1/3 cup sugar
- 2 tablespoons flour
- Dash salt
- 1/4 teaspoon almond extract
- 2 cups coconut
Grease and lightly flour a cookie sheet.
In a medium bowl, beat the egg whites lightly. Add the sugar, flour, salt and almond extract and blend well. Stir in the coconut and drop the dough by teaspoonfuls 2 inches apart.
Bake for 13 to 17 minutes until set and lightly browned. Immediately remove from cookie sheet.
