Strawberry Streusel Bars

Prep Time: 20 minutes
Cook Time: 45 minutes
Ingredients:
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 cups all-purpose flour
  • One 10-ounce jar strawberry jam (raspberry or apricot is also good)
  • 1 cup flour
  • 1/4 cup cold butter
  • 1/4 cup sugar
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla
Preparation:
Base
In medium mixing bowl, beat first two ingredients with an electric mixer or by hand until fluffy. Beat in egg. Add 2 cups flour gradually until fully incorporated. Press this mixture into the bottom of a greased 9-by-13 or 10-by-10 baking pan. Spread jam to within 1/2 inch of the edges.

Streusel Mixture
Make streusel mixture by combining 1 cup flour, cold butter and 1/4 cup sugar with a pastry blender or 2 forks until crumbly. Sprinkle evenly over preserves and bake in preheated 350 degree F oven for about 40 to 45 minutes until top is lightly golden brown. Cool on a wire rack.

Icing
Combine final three ingredients until very smooth and drizzle over bars when cool. Let set 1 to 2 hours before cutting into bars.

Makes 24 bars.
