At the Farmers Guest House, Susan Steffan uses farm fresh, locally sourced ingredients whenever possible. Her Garden Oven Omelet is a perfect springtime example of this, and a big favorite with guests. Served with fresh fruit, muffins and farm fresh meats, this is a meal that keeps guests walking the historic streets of Galena, IL for hours!

Ingredients:

  • 1 stick butter, melted
  • 1 ½ c flour
  • ¾ tsp salt
  • ¼ tsp pepper
  • 21 fresh eggs
  • 3¾ cup cottage cheese or whipped ricotta
  • 3 cup shredded cheddar cheese
  • ¾ cup chopped onion
  • ¾ cup chopped green/red pepper
  • 2 cup chopped asparagus

Preparation:

Place butter in a large microwave safe bowl. Melt. Whisk in flour, salt & pepper until smooth. Add eggs 2-4 at a time whisking until mixture is smooth and all eggs are incorporated. Add remaining ingredients. Pour into 18 individual ramekins and bake at 350 for 45 – 55 minutes, until top is lightly beginning to brown and center is set.
