Eggs Madison Recipe

Innkeeper Comments: "Just about any veggie, cheese, or meat will work. Experiment with your favorites! Add a dash of curry."

Prep Time: 0 hours, 25 minutes

Cook Time: 0 hours, 40 minutes

Ingredients:

  • 8 eggs
  • 1 cup milk
  • 1 large sliced or cubed zucchini
  • 5 large, sliced mushrooms
  • 1 cup sliced or cubed cheese (Monterey Jack or other cheese that will melt)
  • 1 cup (or more) sliced smoked sausage (or other type of sausage cut in bite-sized pieces)
  • oregano to taste
  • salt to taste
  • pepper to taste

Preparation:

Mix all ingredients well. Dip into sprayed or greased ramekins about one-half to three-quarters full.

Bake at 350 degrees for 30 to 40 minutes.

Serves 4. Serve immediately out of the oven.
