Comments from the innkeeper: "This was an original recipe from our neighbor Stina Gustafson. My Mom would make it for a light dinner Sunday night. The thing I like about this recipe is that I can use anything I want and customize it depending on guests dietary issues such as no meat, and can even make a smaller omelet for one or a larger omelet with a big pan. It is a great recipe for repeats as it is never the same way twice. It just depends on what I may have that I want to use up... use your imagination!"

Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients:
  • 4 eggs
  • 3/4 cup flour
  • 2 cups milk, or 2 cups half-and-half
  • various other items (e.g., chopped ham, shredded cheese, chopped scallions, mushrooms, just about anything!), to taste
Preparation:
Preheat oven to 400 degrees F.

Whisk eggs well and add flour. Continue to whisk well. Add milk or half-and-half. Again, whisk well.

Spray PAM into a medium-sized cast iron skillet. Spread the "other" items over the bottom, pour in the egg mixture.

Bake at 400 degrees for 25 to 30 minutes, or until puffy and browned. Serve immediately.
