Colonial Innkeepers Pie Recipe - Funny Cake

Innkeeper Comments: "This recipe is from Jeff's grandmother and brings to mind fond memories of his childhood. When he was young, his grandmother would call this 'Funny Cake.'"

Prep Time: 30 minutes

Cook Time: 35 minutes

Ingredients:

  • BOTTOM:
  • 2 unbaked 8-inch pie shells
  • 1 cup sugar
  • 3/4 cup warm water
  • 1/2 cup cocoa
  • 1/2 square semi-sweet baking chocolate
  • 1 tablespoon margarine
  • TOP:
  • 2 cups sugar
  • 1/4 cup margarine
  • 1/4 cup Crisco
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • dash of salt

Preparation:

Bottom: In a double boiler, combine sugar, warm water, cocoa, chocolate and margarine until melted. Let cool.

Top: Combine sugar, margarine and Crisco. Beat in eggs, milk, vanilla, flour, baking powder and salt until smooth.

Divide cooled chocolate between both pie shells. Spoon 1/2 of the top batter over the chocolate layer working from the outside in.

Bake at 350 degrees for 30 to 40 minutes.
