Rhubarb Coffee Cake Recipe

Cook Time: 0 hours, 50 minutes

Ingredients:

  • 1 1/2 cup sugar
  • 3 1/4 cup flour
  • 2/3 cup butter
  • 4 teaspoons baking powder
  • 3 eggs
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 2 cups rhubarb

Preparation:

Preheat oven to 350 degrees.

Cream sugar and butter. Add eggs and rhubarb. Sift and mix all dry ingredients. Add all together. Bake at 350 for 45 to 50 minutes.

Batter should be stiff/somewhat dry; if not, add some flour. A "liquidy" batter will result in a heavy/flat cake.

When done, rub some butter over top for a glaze. Serve plain or with strawberry jam.
