Oatmeal / Whole Wheat Apple Cinnamon Pancakes

Cook Time: 0 hour, 10 minutes
Ingredients:
  • 1 1/2 cups oatmeal, uncooked
  • 2 cups buttermilk (or 2 cups milk plus 2 teaspoons vinegar)
  • 3 egg whites (or 2 whole eggs)
  • 1 cup whole wheat flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking soda
  • 1/4 teaspoon vanilla
  • 1 apple, peeled and chopped
Preparation:
Mix oatmeal, buttermilk and egg. Let stand 30 minutes to overnight, refrigerated.

Add remaining ingredients, stirring batter JUST until dry ingredients are moistened. Bake on lightly oiled hot griddle, turning when bubbles start to form on top. (Griddle is correct temperature when water sprinkled on it sizzles and disappears almost instantly.)

Sprinkle top liberally with cinnamon. Serve with real maple syrup and butter. Serves 3 to 4.
